Visit the Wispe Brewery in the garden of Amsterdam. A region with fortress and historical river estate. Our brewery is located in the centre of the old district Weesp, in an neo-Gothic style church. Visit the Wispe taproom, taste our fresh beers and become acquainted with our craftsmanship.

Our Brewing Process

To make beer, all you really need is water, malt, hops and yeast. What makes Wispe special is our signature. We know what to do, every step of the brewing process. That’s how we bring the unique flavors in our beers to life.

Malting

Malt is the foundation of the brewing process. The malt is germinated and dried. This process is called malting.

Mashing

In our brewery, the malt is milled into a substance which is called grist. The grist is mixed with water to create a pulp. This is also called mash. By heating the mash, the starch is converted into natural sugars. The next step is called lautering. The mash is filtered and a clear liquid called wort is extracted.

Lautering

The next step is called lautering. The mash is filtered and a clear liquid called wort is extracted. The wet solids left over from wort extraction are called spent grains. Our spent grain is send to a local farmer for use as animal feed.

Boiling

After the lautering process, the wort is boiled in our kettles. During this boiling process we add hops and herbs.

Fermentation

Our yeast is added to the cooled wort. Sugars are converted into alcohol, carbon dioxide and flavours. The fermentation process lasts about a week. After this we can speak of young beer.

Conditioning

We allow the young beer to mature for a number of weeks in lagering tanks. After the conditioning process, we will remove the remaining yeast and hops. This gives our beer the desired clarity

Bottling

This bright beer goes into a bright beer tank, after which is ready to be filled in our bottles and kegs.

Enjoy

The brewing process is now complete and ready for you to enjoy a good glass of Wispe.

Our Hops

We grow our hops close to the brewery. The hop field can be visited. The hops are indispensable for our beers. To show you all the ingredients, we are also working on our own testing ground. This way you will soon experience the complete process: from our brewing grains, hops and herbs, to a good glass of Wispe beer on your table.

Anker Weesp

The local miller found an old jenever recipe from 1630 and decided to get it back in production. The small-scale distillery of Anker Weesp is now located in the Wispe Brewery and a well known name in the wider area. Authentic jenever is distilled here as it was drunk in the 17th century. In addition to jenever, Anker Weesp also produces various liqueurs and gin. Fantastic drinks that we proudly serve in our taproom in addition to our beers. Both pure and in delicious cocktails.
